This beauty loves the birds! Label Anglais roast chicken with new potatoes and thyme, confit of duck or a sliced smoked duck breast with peas cooked with pancetta and lettuce. Pheasant when in season and partridge. Terrines are good too such as pork and pistachio or duck terrine. Mushroom risotto and tagliatelle with fresh ricotta, broad beans and mint make an interesting change, but don’t rule out fish! A seared sesame crusted tuna steak with a crunchy Asian slaw can also work very well too.

ABOUT: This magnificent property, which dates back to the 9th century was once owned by the first Duc of Burgundy. The soils are rich in clay, but the limestone is still very present as well as some areas of marl. These characteristics give the red wines of Mercurey finesse and structure. The wine has been aged in oak barrels for 13 months.
