ABOUT: With a 70hectare property in Bolgheri, the Allegrini family have planted Merlot, Cabernet Sauvignon and Cabernet Franc and Vermentino. Grapes for this rosato have been sourced from a 3hectare plot of their Le Sondraie vineyard 25m above sea level where the soil is rich magnesium and iron. Grapes were whole bunch pressed and fermented in stainless steel. The wine remained on fine lees until bottling. ‘Cassiopea’ is super as an aperitif but structured enough to be an excellent companion to a range of dishes.
