ABOUT: Located in the stunning area of Central Otago, the long growing season and Summer heat allow the beautiful pure red and dark fruit flavours to develop. These grapes get even more love once they reach the winery where each parcel gets a week long cold soak, then fermentation with a combination of wild and cultured yeasts. Plunged daily to extract the wines vibrant colour and delicate tannins, each parcel was pressed separately to a mix of French oak barrels, or remained in stainless tanks. In the spring after completing malolactic fermentation, each parcel was tasted and blended for bottling. Can age over the next 5 years.
