ABOUT: All the vineyards are farmed organically and some are in the process of going through a three year conversion period before being officially certified. Grapes were hand-harvested then gently pressed at the winery to retain the delicate aromatics and flavours. Malolactic fermentation and fine lees ageing for 8 months before bottling result in a well balanced wine with a pronounced minerality and a long saline finish.
